Summer soups may sound counterintuitive, but trust us; they’re just the ticket on these hot August nights. Whip up a batch and pop into your refrigerator (or make a double batch and freeze some) for an easy peasy weeknight dinner. If you like, you can pair a bowl-full with a market-sourced BLT. We have such great bacon at the market, includingR&M Farm's, which is nitrate-free. If you were able to snag some Garlic Scape Mustard from Channery Hill Farm last week, you’ll want to slather that on. And don’t forget to tuck in some leafy greens from Fresh Meadow Farm. Read on for some nutritious and delicious summer soup recipes, most involve little or no cooking.


We’ll start, of course, with gazpacho, that versatile soup that welcomes almost any vegetable to the party. This easy gazpacho can be made with ingredients almost completely sourced from the market, including Agape Premium EVOO. For an extra crunchy punch, sprinkle with lightly salted mung beans from The Lentil Hub. They’re packed with protein, fiber, and minerals such as folate and magnesium. Feel free to substitute other vegetables. Got some bell peppers getting soft in your vegetable drawer? Toss them in. Not sure what to do with all the celery you bought last week? Drop some into the blender, too. This surprisingly sturdy soup can handle almost anything.


This cold cucumber soup is as pretty as it is tasty. Again, you’ll find almost every ingredient necessary at the market. Including yogurt from White Moustache Yogurt. Pair with toasted Wild Yeast Sourdough from Wave Hill Breads spread with smoked ricotta from Maplebrook Farm Creamery or a tomato and garlic spread from SAHA Guys. Relax and enjoy!
