Everything Farmers Market Ribbon Salad

About the Recipe

Ingredients

  • The Base: Butterhead or other Lettuce, Arugula, and a handful of Spinach.

  • The Crunch: 1 Carrot, 1 Golden beet, 1 Cucumber, and 2 Scallions.

  • The Crowning Jewel: A big handful of your Basil and Mild Mix Microgreens.

  • Pantry Dressing: 3 tbsp Olive oil, 1 tbsp Apple cider vinegar (or lemon juice), 1 tsp Honey or sugar, salt, and pepper.

Preparation

  1. Prep the greens: Wash and tear the butterhead lettuce, arugula, and spinach into a large bowl.

  2. Shave the veggies: Use a standard vegetable peeler to shave the carrot, golden beet, and cucumber into long, thin ribbons. (Peel the beet first, but leave the cucumber skin on for color!). Thinly slice the scallions. Toss these into the bowl with the greens.

  3. Dress: Whisk the olive oil, vinegar, honey, salt, and pepper together in a small bowl until emulsified.

  4. Toss & Finish: Drizzle the dressing over the salad and toss gently. Right before serving, pile the delicate basil and mild mix microgreens right on top so they don't get bruised.
